STUFFED
ARTICHOKES

4
large artichokes sausage meat 4 bacon slices 1 medium onion, peeled and
chopped 1 carrot, peeled and chopped 1 cup stock
Cut artichoke
bottoms flat. Cut leaves across in half. Blanch in boiling water for 15
minutes. Cool, remove inside. Stuff with sausage meat. Cover with bacon slices.
Sprinkle onion and carrot over bottom of baking dish. Arrange artichokes on
vegetables. Pour stock over. Bake at 350 degrees F. for 40 minutes or until
artichokes are tender. Serve hot.
