TOM'S THUMBPRINTS

1 cup unsalted butter, softened 1/2 cup sugar 1/2 teaspoon
almond extract 2 cups all-purpose flour 1/2 teaspoon salt 1/4 cup
seedless raspberry jam
In the bowl of an electric mixer, cream
butter and sugar, with almond extract. Stir flour and salt until dough is
well mixed. Cover dough and chill for one hour. Mix dough. Preheat oven
to 350 degrees. Shape dough in 1 tablespoon balls; place on ungreased sheets.
Make a small indentation in the center of each ball with your thumb; bake 5
minutes. Remove from oven and fill each indentation with 1/4 teaspoon jam;
bake 5 more minutes. Cool for 2 minutes; transfer to a rack.
