VANILLA
WAFERS
1/2 cup soft butter
1/2 cup sugar 1 egg 1 teaspoon rind lemon 3/4 cup cake flour
1 teaspon vanilla extract
Preheat oven to
375 degrees. Grate the lemon to get the lemon rind. In the bowl of an
electric mixer, cream butter and sugar until light. Add beaten egg and vanilla.
Mix in the flour and lemon rind. Spoon mixture in a pastry bag fitted with
a 1/4 -inch plain tube. Pipe small amounts of batter onto the cookies
sheets leaving a 2-inch space between each. Bake for about 8 to 10 minutes
or until golden brown.
